Dish: Vegan Huaraches with soyrizo

Walked over and paired with an Éphémère apple white ale next door at Apex, the huaraches plate is a familiar combination of Los Gorditos’ salty refried beans, spiced soy chorizo and other favorites served on top of a long strip of grilled corn pasa.
If there’s one thing I want to tell you about this dish, and this trip we both took, it’s remember to grab a fork - and a knife, or you’ll find yourself attempting to scoop it up like I did, which is obviously much more appropriate if you were in the privacy of your own home. Yeah, I found orange hot sauce on my sweatshirt the next day.
Bonus points for feeling moderately more mature for trying something new and not ordering nachos.
